Charred Jimmy Nardello Peppers Recipe

During a visit with our son from Oregon we were introduced to Jimmy Nardello peppers and how to best prepare them. His charred method totally blew us away. The peppers come out sweet, smoky, and addictively snackable, and the charred seeds taste like popcorn. This may just be my new favorite way to enjoy these incredible peppers.

Ingredients

  • Jimmy Nardello peppers (enough for a skillet in a single layer)
  • 2 tablespoons avocado oil
  • A pinch of salt

Instructions

  1. Slice the peppers very thin — about 1/8 to 1/4 inch thick.

  1. Heat 2 tablespoons of avocado oil in a skillet over medium-high heat.
  2. When hot, lay the peppers in a single layer, sprinkle with a pinch of salt, and stir while frying.
  3. Let them char deeply — some will get nice and dark; that is the magic.
  4. Remove when they have a nice char on most of them, let them cool for a minute, and dig in.

Tips

  • Slice thin enough for quick charring, but not so thin they disappear.
  • Don’t be afraid of deep color on the edges — that char is what makes them taste so good.
  • Charred seeds tasting like popcorn is a feature, not a bug.
